You do want to disconnect it from the 12 volt power in storage; if you're going to be away for a while but not for the season, you can also put it in Low Power mode by pressing and holding the Function button for 5 seconds. When in this mode, the interior lights, compressor and defroster are off.

I'm sorry you weren't given a set of instructions to go along with your SeeLevel RV Holding Tank Monitor # SE94VR. I've attached a diagram below showing that the White wire will run to your water pump, Red to your 12v power source, Black to your sensor strips as the ground, and Blue to your sensor strips as the positive. To make your connections you can use some 18 gauge wire.

To trickle charge from the 7-way you can just run a 12AWG line from the 12v accessory wire in the 7-way/junction box to the battery. From there you can install a small charger like the NOCO Genius Smart Battery Charger # 329-GENIUS2D. This charger can plug into an outlet and will provide a small 2 amp charge for the battery and is recommended for batteries rated up to 40 amp-hours. For the installation you'll want to pick up some butyl tape # AL28FJ and non-sag sealant # 344270341437-1 in order to prevent any water leaks.
